Cuisine

Inspired by old world and new world flavors, the cuisine at The Lodge ranges from the simple to the elegant, always at the desire of our guests. Our European-trained Chef draws on flavors and recipes he has personally experienced from his travels throughout the United States, Mexico, Costa Rica, Argentina, Italy, Spain, France, Czechia, Hungary, France, Scotland, England, Africa and Australia. We offer our guests a true farm-to-table experience plating the finest Santos Patronos Wagyu beef, Berkshire pork farm-raised by our friends in Turkey, North Carolina, the freshest seafood shipped directly to us from reputable sources like Pike Place Fish Market in Seattle, and locally sourced greens and herbs. How about a cowboy breakfast that includes Santos Patronos Wagyu chicken-fried steak? Or a gourmet Santos Patronos cheeseburger for lunch? For the evening, you might consider starting with a crisp tuna tartare, a fresh salad made with local greens, roasted pecans and fresh fruits, followed by a seafood pasta, and then a tasting of different cuts of perfectly grilled Santos Patronos Wagyu steaks. Make sure you leave room for our luscious homemade desserts, such the most delicious pecan pie you will have ever tasted, made with pecans from Santos Patronos of course! Retire to the lounge, the long bar, or the rocking chairs on the veranda to enjoy after-dinner coffee or spirits, and perhaps a fine cigar while you count the stars in the night sky.
